Ingredients

4 Baking Potatoes
1/4 cup fat free sour cream
1/4 cup fat free plain yogurt
1/4 cup fat free milk
Salt and pepper to taste

Instructions
1. Peel and dice potatoes
2. Place in boiling water until tender
3. Mash together cooked potatoes, yogurt, sour cream, and milk.
4. Add salt and pepper to taste.

Ingredients

Chocolate box-cake mix; 12 oz diet soda; 8 oz low fat cream cheese (room tempurature); 1/2 cup peanut butter (low fat)

Instructions
Combine cake mix and diet soda; follow baking instructions on the box. To make icing, combine cream cheese and peanut better until smooth. Let cupcakes cool and top with peanut butter icing.

Ingredients

1/4 cup powder sugar
(1) box dry chocolate cake mix
(1) 8oz tub regular cool whip***not lite or fat free***

Instructions
In a large bowl, slowly blend cake mix into cool whip until the consistency of taffy. If the mixture is too dry add water by the tsp until the correct consistency is obtained. Roll into balls by rounded TBSP , then roll into powdered sugar. Place on pam sprayed non-stick pan and bake 8-10 min @350F.
Add mini chocolate chips if desired but adjust points accordingly. Makes 36 cookies. This recipe was run through recipe builder. The recipe was given to me by a friend who stressed not using anything but regular cool whip or the cookies will not form correctly. Also 1 cookie= 1 point but 2 cookies =3 points so beware

put cut and chopped veggies in lg kettle add to this the broth ,frozen veggies and rest of ingredients.cook on medium heat till carrots are almost tender.pre heat oven to 325 .in deep casserole dish put chicken veggie mixture.open can biscuits and place on top of chicken mixture and bake for 35 to 45 min.makes 8 servings

2 containers Weight Watchers Lemon Cream Pie yogurt
1 tub fat free Cool Whip
1 Keebler reduced fat graham cracker crust

Mix together pudding mix and milk. blend in yogurt and cool whip Pour into crust. Freeze until 1/2 hour before serving . There will be enough extra filling to enjoy two 1/2 c. servings of Lemon Chiffon Filling without crust at just a single pt

Ingredients

3 cups Chicken Broth
1 can of diced tomatoes
2 16 oz frozen vegetables (broccoli, cauliflower, carrott)
10 oz. 2% velveta cheese

Instructions

Boil the chicken broth, tomatoes and vegetables for 10-15 minutes.

Let soup cool then add the cheese. You want the cheese to be able to melt when it is stirred.

I use 3 boullion cubes for the broth and I use spicy tomatoes because I like it hot.

1/4 cup Splenda Brown Sugar Blend
3/4 cup flour
1 tbsp cocoa powder
1/4 tsp baking soda
1 egg white
1 tsp vanilla extract
1 tsp mint extract
1 tbsp canola oil
1 oz. mini semi-sweet chocolate chips

Instructions
Preheat oven to 350
Spray nonstick spray onto cookie sheet
Mix dry ingredients together
Add Liquid ingredients
Add Chocolate Chips
Roll the dough and put onto cookie sheet
Bake for 8-10 minutes

pillsbury reduced fat devil's food mix
pureed pumpkin
splenda
pumpkin pie spice
fat free cream cheese

Instructions
take 1 pillsbury reduced fat devil's food mix and mix with 1 (15 oz.) can of pureed pumpkin (will be thick) Evenly distribute into 24 cupcake tins. Beat 1 fat free block of cream cheese with 1/2 cup of pumpkin puree. Add 2 to 3 tablespoons of splenda and 1 tablespoon of pumpkin pie spice and mix well. Top each of the 24 cupcakes with this mixture and bake for 18 to 22 minutes!

1 box Pillsbury Reduced Sugar Devils Food Cake mix

12 oz of diet root beer (or any other diet soda)

1 container Pillsbury Reduced Sugar Chocolate Fudge frosting

Instructions
Mix soda and cake mix - do not add anything else!

pour into 24 cupcake tins, bake according to box directions

scoop all the frosting into a bowl, beat for several minutes to fluff up the frosting

liberally frost the cupcakes

4 Boneless Skinless Chicken Breasts
1/3 C. Corn Flake Crumbs
1/4 C. Reduced Fat Parmesan Cheese
1 Packet Dry Hidden Valley Ranch Dressing 1 oz.

Instructions
Combine Corn Flakes, Cheese and Dressing mix. Spray Chicken with buttered flavor Pam, then roll in crumb mixture to coat. Place in sprayed cake pan and bake uncovered 45 min. or until done. This is one of my family's favorites. Quick and easy to prepare. Serve with small baked potato and a steamed veggie - wonderful meal.

Ingredients

1/2 cup bisquick reduced-fat baking mix
15 oz. canned pumpkin
1 cup fat free (skim) milk
1/2 c. egg beaters
3/4 c. splenda
1 tsp. vanilla
1 tsp. pumpkin pie spice

Instructions
Mix all. Spray a 9 in. pie plate and pour mixture in plate. Bake at 350 for 30 min. or until knife comes out clean from center of pie. One eighth of pie equals 2 points. You can substitute 2 large sweet potatoes for the canned pumpkin, and substitute 1/2 tsp. cinnamon, 1/2 tsp. nutmeg, and 1/4 tsp. allspice, for the pumpkin pie spice and make sweet potato pie. You may cut the sweet potato pie into 6 slices for 2 points each

Ingredients

1 1/2 cups all-purpose flour
1 1/2 cups whole wheat flour
4 1/2 teaspoons baking powder
1 1/2 teaspoons salt
1/3 cup packed brown sugar
1 (12 fluid ounce) can or bottle of beer

Instructions
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large mixing bowl, combine all-purpose flour, whole wheat flour, baking powder, salt and brown sugar. Pour in beer, stir until a stiff batter is formed. It may be necessary to mix dough with your hands. Scrape dough into prepared loaf pan.
Bake in preheated oven for 50 to 60 minutes, until a toothpick inserted into center of the loaf comes out clean. If you use light beer the point value is 1 pt

Double Blueberry Oatmeal

Combine 1 cup cooked oatmeal with 1/2 C blueberries and 1 tsp brown sugar. Serve with another 1/2 C blueberries on the side (3)

Vegetable Omelet

In medium skillet sprayed with nonstick cooking Spray, cook 2 Tbsp each finely chopped onion, diced green bell pepper, and 1/4 C diced cooked red potatoe till softened. In bowl, beat together 1 egg and 1 egg white; add to vegetable mixture. Cook till set. (2.5)

Breakfast Sandwich

Top 1 slice reduced calorie whole-wheat toast with vegetarian sausage type breakfast patty & 2 Tbsp shredded LF Monterey Jack Cheese. Broil till cheese is melted, then top with another slice of toast (3)

Breakfast Ideas

Here are some Breakfast Ideas from Weight Watcher Book I got a few years ago when I went to weight watcher meetings. I know some of these may not be precise on the points so always calculate the points if you follow weight watchers The points will be in Parenthesis.

1 cup cooked oatmeal,sprinkled with cinnamon and sugar substitute (2)
1 cup of FF Milk (2)
1 cup of grapes (1)

1 cup of whole-grain ready to eat cereal (2)
1 orange (1)

Fruit n' Yogurt Crunch-
top 1 cup of whole grain cereal with 1 cup of light vanilla yogurt and 1 chopped pear (5)

1 small grapefruit (1)

7 Sweet Treats With Biscuits

Refrigerated biscuit dough makes the perfect shell for wonderful tart fillings. Prepare the shells in advance and snacks are a snap! To prepare shells,preheat oven to 350 degrees. Pul Biscuits apart. You'll need seven biscuits. (Wrap extra biscuit dough in plastic wrap and refridgerate for another time.) Roll out each of the seven unbaked biscuits to a 4" diameter. Line each of the large muffins cups with one rolled-out piece of dough. (using large muffins cups will give you shallow,wide shells.)
Prick dough all over with a fork to prevent dough from rising too much while baking. Bake shells till lightly browned, About 10 mins. (timing will vary depending on your oven). Cool,then remove shells from Muffin Cups and place in a resealable zip-top plastic bag and refridgerate till your ready to Use them. Fill one biscuit shell each day to make the following Treats:


1. Mini-Chocolate Cream Pie- Fill on biscuit shell with 1/3 C Fat-Free Chocolate pudding, Top with 2 Tbsp. Fat-Free Whipped Topping-3 Weight Watcher Points

2. Lemon Tart- Mix together 2 Tbsp Fat-Free whipped topping and 1 Tbsp lemon Curd; fill one biscuit shell with mixture. Top with 1/3 C. Blueberries- 3 Weight Watcher Points

3. Creamy Strawberry Pie- Fill One Biscuit shell with 1/4 C. Sugar Free Strawberry-Flavored gelatin. Top with 1/2 C. sliced Strawberries mixed with 3 Tbsp Fat Free Whipped topping. -- 3 Weight Watcher Points

4. Apple Tart- In small saucepan combine 1 pared,vored and diced small apple,3 Tbsp water, 1 Tbsp granulated sugar, and 1/8 tsp of Ground Cinnamon. Bring to a boil; reduce heat. Simmer till apple is softened;cool. Fold in 2 Tbsp Fat Free whipped Topping & spoon into one biscuit shell. --3 Weight Watcher Points

5. Pineapple Treat- Preheat broiler. Fill one biscuit shell with 1/4 C drained canned unsweetened pineapple chunks. Sprinkle with 2 tsp brown sugar;broil till sugar is melted. Top with 2 Tbsp FF Whipped Topping- 3 Weight Watcher Points

6. Fruit 'n' Cream- Mix Together 1/4 c FF Sugar Free Vanilla Pudding,1/4 C Chopped grapes, & 2 Tbsp FF Whipped Topping; spoon into one biscuit shell- 3 Weight Watcher Points

7. Blueberry Yogurt Tart- Fill one biscuit shell with 1/2 C light vanilla yogurt. Top with 1/3 C Blueberries--3 Weight Watchers Points
