7 Sweet Treats With Biscuits

Refrigerated biscuit dough makes the perfect shell for wonderful tart fillings. Prepare the shells in advance and snacks are a snap! To prepare shells,preheat oven to 350 degrees. Pul Biscuits apart. You'll need seven biscuits. (Wrap extra biscuit dough in plastic wrap and refridgerate for another time.) Roll out each of the seven unbaked biscuits to a 4" diameter. Line each of the large muffins cups with one rolled-out piece of dough. (using large muffins cups will give you shallow,wide shells.)
Prick dough all over with a fork to prevent dough from rising too much while baking. Bake shells till lightly browned, About 10 mins. (timing will vary depending on your oven). Cool,then remove shells from Muffin Cups and place in a resealable zip-top plastic bag and refridgerate till your ready to Use them. Fill one biscuit shell each day to make the following Treats:


1. Mini-Chocolate Cream Pie- Fill on biscuit shell with 1/3 C Fat-Free Chocolate pudding, Top with 2 Tbsp. Fat-Free Whipped Topping-3 Weight Watcher Points

2. Lemon Tart- Mix together 2 Tbsp Fat-Free whipped topping and 1 Tbsp lemon Curd; fill one biscuit shell with mixture. Top with 1/3 C. Blueberries- 3 Weight Watcher Points

3. Creamy Strawberry Pie- Fill One Biscuit shell with 1/4 C. Sugar Free Strawberry-Flavored gelatin. Top with 1/2 C. sliced Strawberries mixed with 3 Tbsp Fat Free Whipped topping. -- 3 Weight Watcher Points

4. Apple Tart- In small saucepan combine 1 pared,vored and diced small apple,3 Tbsp water, 1 Tbsp granulated sugar, and 1/8 tsp of Ground Cinnamon. Bring to a boil; reduce heat. Simmer till apple is softened;cool. Fold in 2 Tbsp Fat Free whipped Topping & spoon into one biscuit shell. --3 Weight Watcher Points

5. Pineapple Treat- Preheat broiler. Fill one biscuit shell with 1/4 C drained canned unsweetened pineapple chunks. Sprinkle with 2 tsp brown sugar;broil till sugar is melted. Top with 2 Tbsp FF Whipped Topping- 3 Weight Watcher Points

6. Fruit 'n' Cream- Mix Together 1/4 c FF Sugar Free Vanilla Pudding,1/4 C Chopped grapes, & 2 Tbsp FF Whipped Topping; spoon into one biscuit shell- 3 Weight Watcher Points

7. Blueberry Yogurt Tart- Fill one biscuit shell with 1/2 C light vanilla yogurt. Top with 1/3 C Blueberries--3 Weight Watchers Points

Back in December was my husband birthday and we didn't have the money so I went And Got the Cake Mix and went to my Neice Beth's place and we decorated him a cake it was in the shape of a Truck cause he loves Everything About Trucks. It was so cute and I had loads of fun decorating it. So I hope I win!!


My knee is still bothering me. I might have to break down and go to the doctor. Our Co-Pay just to go to the doctor is so high. It was killing me Yesterday Evening I think I walked on it too much chasing after Leah. My brother let me borrow his knee Brace but,it itches me. I iced it last night and then put heat on it. Seems like if I elevate it & keep some heat on it the pain goes away.

It feels so Great to finally get Some recognition on my little old blog. I've not been on plan lately and I'm really trying to do better. This cold weather has really gotten me off plan. I was walking everyday and even began running. But with it being cold out The last thing I want is to get sick and even passing something along to the Toddler. I've not been getting many comments lately on this blog and I can only wonder why since I've not been blogging very much lately. But, I do have one Faithful Commenter and no matter what I've got to say she always tries her best to comment. I've never have been given an award or even tagged in this blogging world. Who might I be talking about?? Amy from Surfing or Spaghetti of Course!! I've not been taking my thyroid meds lately and I guess thats why I've been so tired lately. I just don't have any motivation. I'm desperately trying to find a Wii Fit and maybe I can get some extra exercise in that way. I've not found one yet but,I'm determined to get one. Anyways Maybe once my daughter starts getting in bed like she needs to maybe I won't be so tired. It was after 1 am before she went to sleep? But her nap was off yesterday and She didn't want to go to bed!! I know I need to do something I just feel awful. The place where I work hasn't called me for work in almost 2 weeks and hubby just wants me to quit and stay home with Leah but,If they can get me some hours I would really love to work and have the extra money! We are looking for a house so we can get out of my husbands family house so pray that I find something soon. Hopefully we can find something we can buy. sorry for the delay

I'm so sorry I've not been keeping up with this blog lately. I've not been working cause supposedly they can't find me any work! My little girl,Leah has been sick. Last week she got a stomach virus then gave it to me. I never felt so awful in my life. She has had all sorts of sinus issues but,was thinking it was alot due to her cutting her big molars. Well,now I've got this crud for what makes the 3rd time since October!! I've not been in the mood for working out at all lately. I got on Ebay the other day and ordered Leah a Little Rocking Chair. Its unfinished so it will have to be sanded and painted. I try to look for things I know she'll love and she will sit and bounce on her little toddler bed and try and rock her dollies to sleep. So I believe she will love it. I think I will buy her some new Pjs and maybe a new dollie. I don't care as long as she gets something for christmas. I think Christmas is for kiddies anyways. Its all about giving.

Getting back into Action

Lately things have been going crazy in my life. From Getting scammed out of money that could of been used elsewhere to my job. The lady I was caring for was put in the nursing home a few week ago and work hasn't been stable since. The company I work for put me to caring for a patient all the way on top of a nearby mountain and I just can't drive up there during the wintertime. They only had me working a few hours 3 times a week and Its just not paying me to go up there and work. I may live to regret it but,I really need something closer to home and more hours. I have been looking around online for work but,no luck yet. Maybe my husband can pay all of our bills for the next month or so. I know christmas will be next to none anyways and as long as my daughter has something to open on christmas day thats all that matters to me. I'm really needing to start working out again and try and start eating better. I'm lost about 15 lbs since july and It was hard to get it off and I want

BEWARE OF ONLINE Scammers!!

We've been living with my Husbands family and helping them out since my husbands car accident about 6 months ago. Our Christmas Present to ourselves was to get out of here and be on our own. Even if it meant not getting a gift from each other this year. We wanted to do everything we could to get out of here. So,What do I do??? I started looking in the Newspaper and even on LSN which is a similar website to Craigslist. Where people post things they have for Sale,RENT,Free or Trade. I really couldn't find anything in the paper and finally found something on LSN. There was no picture of the house but,there was a good description. The rent was more than I had wanted but,I thought if we worked hard we'd manage. We went to go look at this House this past Wednesday. I really liked the house. The only problem I had with the house was that It only had a walk in shower and having a little girl we really needed a tub. But,still I thought we would still get around that too. It being the end of the month,me not getting many hours at work lately we still wanted the house but,asked if she'd work with us. She seemed a little over eager to help us out. I know we really jumped the gun about getting a place and we really didn't have much money but,I thought if they'd work with us we'd could get things situated and I thought it would eventually all work out for everyone. Well,My brother in law lives up the road from her and I had heard bad things about our future landlord. But,I was being trustworthy and trying to give her a chance. I thought I would paint the living room cause she had it painted a funky purple color and that had to go! She agreeed and even told us she'd pay for the paint. We agreed that we'd prorate the rent and even pay us to paint and for all the supplies. She agreed to even keep the electric,water & Gas on in her name for 60 days which is 2 months or till we got it switched over whichever came first. I don't know but,I felt leary of that she may do something shady. Well,Thursday was my day off but,I thought I'd rest till I returned back to work the next day. She calls at 8am wondering if I'm coming over there? I hadn't planned on it but,I went ahead and told her I'd come over for awhile to paint so I could get it done before Saturday so we could get moved in. I went ahead and got most of the painting done. She kept calling me the whole time I was painting and yapping away. She kept telling me all her problems and even told me about a shed building she had sold for $800 to a man in Knoxville. She later told me he had Stopped Payment on the Check he had written her and she'd wrote checks on it and that her checking account was all messed up. Which,I am sorry isn't my problem. She kept texting and calling us in the early morning hours on our cell phones. She kept texting us saying call me its urgent. I knew something was going on but not sure what? I texted her back and she called within 15-20 mins and this was at 6am she wakes everyone in the house up and even my 2 year old which ticks me off. She said because of her situation she had to have more money. I said we'll I will have to wait and see. She said its Friday I know you and your husband both work and you both probably get paid. I told her I work in Home Health and didn't get paid but 2x's a month but,Marty got paid but,I'd have to talk to him. He said NO we aren't given her anymore money I don't care what's going on with her. Well,I called her back and said no we can't give you anymore money that we just want our money back and we'd return the key and go our separate ways. She said that would be okay. I tried calling her later that day to make arrangements and she wasn't woman enough to answer my phone calls but,she could text me and I think it was because of her thinking that we take her to court or something. Well,I got everything saved she's ever sent me too. We came down our road and was sitting in front of the school and she pulls out in front of us and I had my husband to follow her so we could talk to her. She wouldn't stop so we ended up falling us to her house and she gets out of her branco saying she has no time for us that her son is missing and he's a grown man....whatever! I think he can take care of hisself. It was just something to through us off. So,We went on our merry way. She wasn't woman enough to talk to us face to face or even over the phone but,she could text me? I've been so furious!!! She kept telling me that I breeched the contract?? How? It was her that kept asking for more money? It wasn't in the contract and if anything we where paid up till the 1st Of December. She kept texting me to not go on the property or she'd have me arrested? I called the cops and he said I had paid till the end of the month and I had the right to live there till I was legally evicted. He said it could take up to 90 days to have me thrown out since I actually have a child. We didn't even move not one piece of furniture in this house. I just feel like we where ripped off and I'm furious. Its things like this that makes me not want to trust anyone in this world. I could had used that money to get my child a good christmas for this year but,someone took advantage of me. I went over there last night and she had all the door knobs taken off and I couldn't even get in the house. I was even more furiated! I talked to a neighbor over there and apprently she's been running all sorts of scams. She will tell people all sorts of pitty stories and give her all sorts of free stuff and then turn it around and sell it for a triple price which I think is wrong. There are actual ppl that actually need stuff like that and she lies to get things and flip it? Apparently I am not the first she's scammed. I put an ad up on LSN and told ppl to watch who they deal with on there. I got so many emails from ppl saying that she scammed them and that she took them for money too!! I wished I could warn everyone about her but,I know there will still be ppl that will fall prey to her and I just hope they don't get scammed out of money like I did. so if your online trading or selling things or whatever even if its a rent house please really check out the person your dealing with because they can really take you for your money. If anyone goes on LSN please stay away from anyone with the name of coltenbaby or angel baby or angellynn. I also found out she has all kids or Pitts and Rotti dogs and has even let them loose on kids? what kind of person is that. I really want to take her to court but,is it worth it? should I walk away and count my losses

On the Move

Well,we finally found us a place!! I'm so excited. We've been living with my husband's Family since his car accident cuz,on my paycheck alone we just didn't have enough $$ aka Moolah to afford to even rent a place. My husband's uncle gave us some land that he said we could build on but,We've hit every sort of road block imaginable. So,Hubby finally decided to move into a place out to ourselves. I've been pretty much begging and pleading for him to move out of his families house 4eva it seems!! We found out my 16 Year old Step-Daughter "might" be pregnant we don't know for sure but,its a huge possiblity. She hasn't said anything to her mother yet. I told her to just wait and we will come to that if we have to. I'm gonna take her to the Doctor when she comes in for Thanksgiving. She lives about 3 hours away. Its been around 7 months since she's even seen her dad. I told my husband that her mom lets her do whatever she wants like she is an adult. What's done is done we can't unchange it. She has no stability in her life. She gets mad at one parent for trying to correct her and then goes lives with the other and it just repeats itself. She doesn't have no stabilty like that!!! If she is preggers I just hope she finishes school She now a Junior in School and she has about a Year and a half left to go. It would have to be hard to be a teen-aged mom and trying to finish school. Motherhood is hard enough let alone having to be one as a teenager. I think my husband is thinking that if her mom blows her top that way she will have a place to come to if she needs one. So Hopefully we'll get moved into this new place within the next month or so. I'm just so EXCITED!!!! We have most of our things packed up so we won't have to worry about the packaging part. We just have our dressers and our beds her at martys families house. I finally got placed at another house at work. I'm only working 24 hours a week :( not good!! I need some more work. I need at least 40 hours a week if we are gonna be living out on our own. I will be working Mondays,Wednesdays,Fridays & Saturdays.

I called the Electric and Water to see how much we'd have to pay to get them turned on and surprisingly it wasn't too bad! So hopefully My husband can Pay the 1st months rent and deposit and I can get the Electric & Water paid so we can get moved in. WE have alot of things that we'll have to buy that we threw away when we packed our stuff up in storage. My husband doesn't want me to take this computer to the new place. He said at the end of January when we get our Taxes he was gonna buy me a new computer. So,I decided I would trade with his aunt. She said I could buy her living room set. Love Seat,Sofa,recliner. I believe its an ashley furniture its not the greatest but,I thought I would repay them since I really don't have the cash that I'd give them this computer since I'm buying me a brand new computer. I'm thinking of a New apple laptop or maybe the new HP smarttouch. We'll just have to see when that time comes. The house we are moving into is a 3 Bedroom & 3 Bath. I might just make one of the rooms into a workout room/ computer room. I guess it depends on my Step-Daughters Situation.

On the workout front...there hasn't been any in almost 2 weeks I guess. I've been so sick. I think I had the flu or something then I think it turned into strep Throat. My mouth has never been so sore. I'm gonna try and get back into workout though I promise. ohh yeah I have to tell you what leah done this morning. I got up outta bed to use the bathroom. Leah was waking up and thought it would be awhile before she'd actually get outta bed. One thing about living with family I have Marty's Aunt to help me with Leah. I figured it would be awhile before she'd actually get outta bed. I was using the bathroom and I heard Leah Yelling "Di...Di....Diiiii,DIIIII" it was so cute. Diane which is Marty's Aunt was up waiting for a kid to get here that she babysits. Well,she came into our room and leah was sitting on the side of the bed. Nothing was wrong she just didn't want to get outta bed all on her own. Talk about lazy. I was calling her Lazy bones this morning. So cute though...

I got some christmas prints and some new iguana med scrubs.

I also ordered some make-up from coastal scents from EDM ( Everyday Minerals) which is mineral make-up. I order 3 foundations 3 blushes,3 concealers,2 brushes- a flat top and the long handled kabuki. I'm really excited to try this mineral make-up. I've wanted to try mineral makeup for a long time plus its so much better on your skin.

From Coastal Scents I got the pink brush set which is so cute!! I also got a 22 neutrel eyeshadow palette which is most of the colors I use on a daily basis. So I got alot of stuff and I will take pictures when I receive it. It was so much fun shopping for me! I love shopping

I H8T3 my new patient @ work!!

I started sitting with a new patient at work yesterday. The other lady I cared for was put in the hospitial last week. I already miss her. I dislike the new patient. Everything I do isn't right nor good enough! Ugh!! She said I can't keep anyone here. Umm... I wonder why??? I really hope Mrs. Nell gets to come back home cause I hate it here. I guess I just took to my old patient better.

Eating Organic

So as most of you know I've been trying to get back in shape. I'm approaching my 30th birthday in April and I'm not getting any Younger! In my early 20s I would just not eat but,I really think thats unsafe as well as unhealthy. I believe that is why my thyroid and metabolism is the way it is now because of those eating habits. Since July I've lost 14lbs isn't that awesome? I would like that number to be higher but,I'm trying to learn to live a healthy life when I was younger healthy wasn't in my vocabulary I just wanted a smaller pants size but,I guess as you get older you want to be healthier. My husband and myself are wanting more children but,I want to be healthier than I was before my last pregnancy and even what I am now. I had some issues during my pregnancy with leah and I am thankful she's here with me. I so don't want to go through that again. Having an Emergency C-Section as well,as a Staff Infection took its toll on me and I vowed I'd never do that again! I want more kids but,so not going through all that at least I hope so. I want to be healthier before I get pregnant. So,I've been listening to Jillian Michaels again!! I so Love her! How could you go wrong not listening to her podcasts it's very informative. She talks about eating organic and how much more healthy it is for you. I was listening to an older podcast of hers the other day and she was talking about alot of the chemicals that are being used in our foods. Now would you give rat poisoning to your children or even those that are dear to you??? I don't think so! I don't think people realize the chemicals that they are putting in our foods. She was talking about a chemical that was put on our foods that has a Cardigen Level 1 do you realize how dangerous that is? People wonder why they are getting cancer or other diseases its just no wonder. Eating healthier can save you on healthcare. How you might ask? Do you ever see healthy people going to the doctor very much? eating healthy and exercising boosts your immune system. So think about what your eating I know organic is much more expensive but,why not grow a Garden and grow some Fruits & Veggies you love. You can also check out Farmers Markets and I believe their fruits & veggies are cheaper most of the time than going to the Grocery Store. Alot of the these chemically processed foods are putting toxins into our bodies and making us fat! Organic Foods help our bodies rid of toxins.It is linked to ADHD,Cognitive Decline,Alzheimeiers and many other disesases.

Down 3lbs and a NS Victory!

I've been weighing 269 and wearing size 26/28W jeans and Yesterday I weighed myself and I weighed in at 266 so thats a -3lb loss. So excited. I went Shopping this week for a new outfit. We are planning on getting our pictures done in a few weeks. I wanted to get all of us something new to wear for a pictures cause God knows I could use more clothes...lol. I had my neice,Beth go with me cause I think she has a great sense of style. She helped me pick something really great and I got my really size and they where too BIG! So excited So I got the next smallest size a 22W and thought I wouldn't be able to wear it and it fit perfectly. I'm so excited about it!!! I'm going to start counting Calories I believe. I think I'm going to start out with 2500 Calories a Day and see how I do and go from there. I also want to start eating organically. I know I can grow my own fruits & Veggies but,this year is pretty much gone to grow anything. So,I thought I would start growing my own stuff this coming year and I can save on Fruits and Veggies in the long run that way. I'm going to start cutting out more processed foods too. I was going to find some organic yogurt but my local walmart didn't have much just something from Stoneyfarms and it was plain yogurt. blah!
I Bought me a brita water filter this past week. I still can taste the chlorine in the water though so the water here must be pretty bad. Yuck! But at work its not as bad? not sure why? its only a few miles down the road. So,I can save money that way too. I'm also going to start having a cup of Green or White Tea everyday. I think there are huge health benefits to drinking Green or White Tea. I thought Maybe i could research the benefits of it and blog about it later.
I really need to start working out but,I have no motivation lately. I know what I need to do to loose this weight why don't I do it??
